Production zone: the vineyards are in the communes of Affi (on hillsides in the hamlet of Incaffi) and Cavaion Veronese, in the hinterland of the eastern shore of Lake Garda, on sites with significant differences between day- and night-time temperatures (an excellent precondition for the development of the grapes’ aromatic characteristics)



DESCRIPTION

Type of soil: clay mixed with limestone, typical of the morainic hills around Lake Garda
Grapes: Chardonnay 80%, Sauvignon 20%
Training system: Veronese Pergola
Yield per hectare: 9,000 kilos
Harvest period: first week of September
Vinification: following traditional white wine vinification, the wine undergoes a long prise de mousse, which takes place in closed vats, according to the typical Italian Martinotti method
Number of bottles produced: 4.000

TASTING NOTE

Colour: a delicate straw yellow, with very faint green highlights

Nose:fruity (reminiscent of greengages) and floral aromas (hints of wild summer flowers and linden blossom)

Flavour: it is creamy on the palate, with very fine bubbles that are well-integrated with the overall sensation of mellow fruit. The taste reveals fruity and floral nuances in line with those found on the nose, along with slight hints of hay and distinctive tones of custard and hazelnut

Serving suggestions: perfect as an aperitif, it also goes well with hors d’oeuvres based on vegetables, cold meats or (both fresh- and saltwater) fish. It makes a perfect accompaniment for typical seafood dishes (sautéed clams, spaghetti or risotto with shellfish-based sauces), freshwater fish starters (tench risotto) or pasta with vegetables (such as courgettes) and in spring it makes an ideal match for asparagus (asparagus risotto, asparagus with hard-boiled eggs) Note: serve cold, at a temperature of around 10°C (50°F), using a flute if serving it as an aperitif, or a broader but nonetheless slender glass if it is drunk to accompany food
